Makes 1 large jug
- 3 large tahitian limes
- ½ – ¾ cup sugar syrup
- 1 handful mint leaves
Fill 1/3 – ½ a large 2 litre jug with ice cubes. Place peels of one lime into the jug. Squeeze in the juice of all the limes and add in the squeezed halves. Add the sugar syrup and enough water to balance out the flavours.
Note: To make the sugar syrup, place 1 cup sugar and 1 cup water in a saucepan, bring to the boil and simmer until all the sugar has dissolved and syrup has thickened slightly. Set aside to cool.
